Shepard’s Pie

Downton Abbey starts again this weekend!  Are you as hooked as I am?  I was so excited to be invited to preview the first episode of this new season, in December.  It was wonderful!  If it’s any indication of the new season, we’re in for a real treat.

But I did think “what a perfect time to share my Mom’s Shepard’s Pie recipe’.  If you’ll be watching DA with friends this season, why not make this to set the tone.  Its a wonderfully hearty dish, served in EVERY British pub – good comfort food that I’m sure the servants at Downton Abbey would enjoy. (The upper crust – probably, not so much).  You can make Shepard’s Pie as a casserole, but I love to serve it in individual one cup ramekins.  Just be sure to use a deep dish.  btw – In the US, I see that peas and corn are often added to the meat mixture, so feel free to improvise.  I’m just not sure Cook Patmore would approve….. just sayin’…..

Shepards Pie

Shepard’s Pie

  • 2 Tblsp unsalted butter
  • 2/3 cup chopped yellow onion
  • 2/3 cup chopped carrots
  • 1 lb ground beef
  • 1 Tblsp flour
  • 1 cup beef broth
  • 1 Tblsp ketchup
  • 1/2 Tblsp Worchester sauce (or soy sauce)
  • 1/2 tsp mixed dried herbs
  • 1 lb yukon gold potatoes
  • 1 Tblsp butter
  • 1/3 cup milk

  1. Melt the 2 Tblsp butter in a large sauté pan. Add the onions and carrots and sauté until the onions are soft.
  2. Add the ground beef and sate until brown.
  3. Drain the meat mixture.
  4. In the same sauté pan, add the flour to the meat mixture and cook for 1 minute.
  5. Add the beef broth and bring to a boil.
  6. Add the ketchup, Worchester sauce (or soy sauce) and dried herbs.
  7. Cover and simmer for 15 minutes.
  8. Preheat oven to 425 degrees F.
  9. Mix the boiled potatoes using an electric mixer.
  10. Add the 1 Tblsp butter and milk and mix until creamy.
  11. Put the meat mixture in a casserole or four 1 cup ramekins.
  12. Cover the meat mixture with the mashed potatoes.
  13. Bake for 20 minutes. ( I placed the casserole/ramekins on a sheet pan to catch any drips of gravy.)
