Oven Roasted Salmon

When I started having my dinner parties, I knew I wanted to serve salmon, but was nervous about cooking it for a crowd.  I knew I didn’t want to pan fry in batches, so how best to cook it?  I checked the America’s Test Kitchen site and found this recipe .  What a winner, the salmon came out perfectly!  If you’ve been nervous about cooking salmon, you have got to try this!  The secret is heating up the oven and baking sheet to 500 degrees F  and then reducing the heat to 275 degrees F, just before putting the salmon in the oven.

 

Oven Roasted Salmon

Yield: serves 4

Ingredients

  • 1 3/4 - 2 lbs salmon fillet,with skin on, about 1 1/2 inches at thickest part
  • 2 tsp olive oil
  • salt and pepper

Instructions

  1. Start out with a clean oven!
  2. Adjust the oven rack to it’s lowest position. Place a rimmed baking sheet on the rack and heat oven to 500 degrees F.
  3. Take the salmon and remove any whitish fat from the belly of the fish, using a sharp knive.
  4. Cut the fish into 4 equal pieces (this ensures that all pieces will cook evenly). Make 4-5 shallow slices, about an inch apart, in the skin side, of each piece – DO NOT cut into the flesh.
  5. Pat the salmon pieces dry with a paper towel. Rub fillets with the olive oil and season liberally with salt and pepper.
  6. Reduce the oven temperature to 275 degrees and remove the baking sheet.
  7. Place the salmon fillets skin side down on the baking sheet. Return the baking sheet to the oven and roast until the center of thickest part of the fish registers 125 degrees, approx 9-13 minutes.
  8. Transfer fillets to plates or platter and serve.
