Since Cinco de Mayo is next Sunday I thought I’d share my recipe for guacamole.  I love guacamole, don’t you? There’s something about the smoothness of the avocado.  Now some purists don’t like onion and tomato in their guac – but I do. So, here’s my guacamole recipe that includes onion, tomato and lime juice. This recipe makes 1 1/2 cups, so you may want to double it for a party.  Make this and my salsa recipe and you’re all set.









Yield: makes 1 1/2 cups


  • 2 ripe avocados
  • Juice and zest of 1/2 lime
  • 1/4 cup finely diced red onion
  • 1/4 cup diced tomatoes
  • 1/2 tsp minced garlic
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup dinced tomatoes


  1. Split the avocados lengthwise and spoon the avocado into a bowl.
  2. Slice or mash the avocado to desired consistancy.
  3. Add the remaining ingredients and stir to combine.
  4. Serve immediately or refrigerate, covered with clear wrap, until serving.
