A few weeks ago I posted about my first experience making polenta. This weekend I decided to try grilled polenta. This time instead of making my own polenta, I used a tube of already made polenta from the grocery store. I simply sliced it and grilled it on my kitchen grill – 8 minutes each side. I served it with a quick sauce using Traders Joe’s Tomato and Red Pepper Soup – cooked down with a little corn starch to thicken it up. Delicious – and a perfect companion to some grilled fish.
