Grilled Polenta

A few weeks ago I posted about my first experience making polenta.  This weekend I decided to try grilled polenta.  This time instead of making my own polenta, I used a tube of already made polenta from the grocery store.  I simply sliced it and grilled it on my kitchen grill – 8 minutes each side.  I served it with a quick sauce using Traders Joe’s Tomato and Red Pepper Soup – cooked down with a little corn starch to thicken it up. Delicious – and a perfect companion to some grilled fish.

Ingredients

  • 1 tube prepared polenta
  • Sauce
  • 1 cup Trader Joes's Gluten Free Tomato ad Red Pepper Soup
  • 1 tsp corn starch
  • chopped chives, for garnish

Instructions

  1. Heat a grill to high heat.
  2. Slice the polenta widthwise.
  3. Grill the polenta slices 8 minutes each side.
  4. Sauce
  5. Heat the soup until warm.
  6. Stir in the corn starch and stir until thickened.
  7. To Serve
  8. Spoon a 'puddle' of sauce onto a plate.
  9. Top with two polenta slices.
  10. Drizzle remaining sauce over the polenta.
  11. Top with chopped chives.
