Cornbread Crusted Pork Chops

One of the more popular posts on a scrumptious life is Picnic Chicken.

This Cornbread Crusted Pork Chops recipe is another take on the same theme.  Center cut pork chops are dipped in melted butter and coated in crushed cornbread stuffing mix, then baked .  The result is a really tender pork chop. Perfect for company or a nice intimate dinner for two.  I served it with scalloped potatoes and sautéed Swiss chard.

Yield: 4 servings


  • 4 center cut pork chops
  • 4-6 tsp butter
  • 2 cups cornbread stuffing mix


  1. Preheat oven to 375 degrees F.
  2. Melt the butter in the microwave, in a medium bowl
  3. Place the cornbread stuffing mix in a zipper plastic bag. Close the bag and slightly crush the stuffing mix using a rolling pin. (You can use a processor, but the crumbs may be too fine.)
  4. Dip the pork chops in the melted butter, then toss with the stuffing crumbs, in the plastic bag.
  5. Place the chops on a sheet pan and bake for 30 minutes.
  6. Remove from the oven and serve warm.
